I love cooking with my slow cooker. It saves me so much time and with the right recipe, the food always tastes great. Last week we made Slow Cooker Chicken Alfredo with Broccoli in the slow cooker and it turned out fab so I wanted to share the recipe with you so you could have a delicious meal with little prep. Great for busy nights when you have games, practices, errands, etc. All you need it some chicken, alfredo sauce, broccoli, a bag of shell noodles and some cheese and milk.




To put the recipe together, you can either defrost the frozen chicken (use fresh chicken) or cook the frozen chicken breasts in the slow cooker (alone) for about 30-60 minutes until thawed enough to cut up. Either way, you want the chicken breasts to be in 1-inch cubes. Once they are cut up, add them to the slow cooker. Then you are going to add two jars of alfredo sauce. To make sure you get all of the sauce out of the jar, put a small amount of water or milk into the jar, recap it, and shake it well and then pour it out. Repeat this a couple of times.
Put the lid on and let these two ingredients start heating up while we cut up the broccoli. You can make it whatever size you/your family likes to eat. I do smaller pieces since I have little kids (and it should cook better that way). Once the broccoli is cut up, open the lid and add the broccoli to the mixture. At this point, you will also want to add about 1 cup of milk and 1 cup of shredded cheese. Let this cook for a couple of hours on hi or 3-4 hours on low. About 30-45 minutes before you are ready to eat, add the noodles and stir well.


This makes about 12 servings (about 1 cup in serving size). It also refrigerates for up to two days.
