Avocado Deviled Eggs

My kids loved deviled eggs. I don’t mind making them, they are fairly simple to put together and it is a good healthy snack for them. I like trying to sneak more fruits and veggies into the foods I make, so I decided to try avocado in the deviled eggs. Turns out, they all LOVED the addition.

To make these avocado deviled eggs, you will just need a few ingredients. Boiled eggs (make at home or buy pre-bought), mayo and avocado. You can also add a little mustard, salt, pepper, and paprika.

Cut the egg in half, lengthwise, and then scoop the yolk out and put it into a bowl. Do this with all of the eggs.

Add a few tablespoons of mayo or miracle whip – I used lite – and a tsp. or two of mustard, as well as salt and pepper to taste. Stir it all together

Now you will take the avocado and cut it in half lengthwise, take the seed out and then scoop the meat out and put it on the cutting board. Use a knife and cut half of the avocado into small pieces, and the other half into slices. Put the small pieces into another small bowl, and smash them softly, leaving small bits.

Take half of the egg yolk mixture, and using two spoons, fill half of the eggs (or you can fill them all if your family all loves avocado). Then take the rest of the mixture and add in the smashed avocado and stir. Then you will fill the rest of the eggs with this mixture.

Once all of the eggs are filled, you will take the slices of avocado and put them on top of the eggs with the avocado mixture. Then you will lightly sprinkle paprika over the top of all of the eggs.

These are simple to make (about 10 mins or less) and your whole family will love them. Having the pre-boiled, and shelled eggs make my life so much easier and I am able to make so many more things that I enjoy like salads, pack them in my kids’ school lunches and more!
