Circus Popcorn Cupcakes

I love how these circus popcorn cupcakes turned out! They not only look cute and fun but tasted yummy too!

We used these along with our Dumbo Cupcakes (you can print out the free cupcake toppers here). These are fun to make and eat.

Making the Popcorn Cupcakes Topping

To make your popcorn cupcakes topping, you will need:

Cake mix (or cupcakes) or make from scratch
Frosting (we used cream cheese, you can make your own or buy)
Sprinkles
Almond bark (or white chocolate)
Popcorn (type doesn’t matter)
Mini marshmallows
Parchment mat

Once you have everything ready, you will want to melt the bark/chocolate. For the amount we did (which was about 2/3 a bag of popped corn) we used one square of almond bark (or about 1/2 cup of white chocolate.

Put it in a microwave safe container (preferably glass bowl) and heat for 60 seconds. Take it out and stir, then put it back in for 30 secs and stir again. It should be melted by now, stirring a lot helps. DO NOT OVERHEAT. It will get thick and a weird consistency.

While the chocolate is melting, put the 2 cups of popcorn (watch for kernels, shells, etc), and 1 cup of mini marshmallows in a bowl. When the chocolate is melted, immedietly pour it over the mixture and stir until well coated.

Next, you will lay it out on a parchment mat to cool (as pictured above). Once you have the mixture spread out evenly, immediately add the sprinkles before it cools. I just added them in strips so they overlapped a little, but I didn’t mind. You can also do them in separated sections.

Just break apart the popcorn mixture and add to the top of the cupcakes

With the popcorn mixture cooled, you will be able to easily break it apart to put on top of the cupcakes. We make carrot cake cupcakes and used cream cheese frosting. Wait to frost each cupcake, one at a time, so that you can have it “sticky” and the popcorn topping will stick to it.
