I recently had a fun day making cupcakes with my kids. They love to be in the kitchen and create new things, and something they can not only make, but decorate and eat is their favorite kind of baking. Since Easter is getting close, we wanted to make Easter Basket Cupcakes. These are very easy to make and my kids LOVE them! All you need is a Pillsbury cake mix (we love the Strawberry and Funfetti), Pillsbury frosting (our favorite is Cream Cheese and it is easy to dye green), shredded coconut, green food coloring, and candy eggs to go on top. When we picked all of this up at Walmart, we also got some really cute Easter cupcake liners. (I also love that I was able to save money on what I got with the Ibotta app!) Mix up a batch of cupcakes, bake and cool, then gather everyone around for a fun treat.
We made the cupcakes according to the package directions and got them baking. While they were in the oven, the kids helped me get everything else ready. We added shredded coconut to a glass bowl and added about 8-10 drops of green food coloring, put the lid on and shook it well until it was all mixed. You can separate the frosting into different bowls and dye it different colors as well. My older kids especially loved this. Once the frosting and the green coconut are ready, the cupcakes should be about done. You will want to let them cool for a little while so the frosting doesn’t melt when you put it on. (I would say at least an hour). This is a great time to play a game or go on a walk with your kids.
When the cupcakes are cooled, we got everything out and the kids had so much fun frosting the cupcakes. Then kids took the “grass” and sprinkled it on their cupcakes and then added a few eggs and pushed them down into the center a little bit. It was a great way to spend some time together and the kids had a great treat to enjoy. Their friends also loved doing this and having a yummy snack. Baking and decorating cupcakes is just as much fun for us as decorating Easter eggs (and way less messy), plus my kids love eating cupcakes more than boiled eggs so this is a family tradition that we love. They also make fun gifts for our family and friends. Not only look great – but are delicious as well.
Spending time together with my kids makes my heart happy. It is the memories and the moments that I will remember long after the cupcakes are gone and they are busy doing other things. Gather around the table together and mix up a moment with your family!
