Mini meatloaf recipe

One of my family’s favorite recipes is meatloaf. I usually make it with mashed potatoes and gravy with a sauteed veggie like squash or green beans. I wanted to mix it up a little bit, so I make the meatloaf into a single serving size (using a mini loaf pan like this one) and then roasted mini potatoes, squash, and carrots in the oven while the meatloaf was cooking. Overall, this mini meatloaf recipe was very easy to prepare and it was also a lot easier to make, bake and clean up since it was all done in the oven.

Before you make your meatloaf (or while your burger is defrosting) you will want to prep your veggies and get them in the oven to start baking since they will take longer. I did mine at 375°F for about 45 minutes and they were perfect! I cut my zucchini into about 1-inch pieces and cut the small potatoes in half. Drizzled oil (olive or whatever you use) over the top and then seasoned with Garlic and Herb seasoning and then the no-salt seasoning from Costco. I mixed them with tongs and then put the tray in the oven while I prepped the meatloaf.

Here is the mini meatloaf recipe

Ingredients:

  • 2 pounds of ground beef
  • 2 eggs
  • 1/4 cup finely chopped onion
  • 1 packet of dry onion soup mix
  • 3/4 cup milk
  • 1 cup breadcrumbs
  • 1/4 tsp ground ginger
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper

Topping

  • 1/2 cup brown sugar
  • 2/3 cup ketchup
  • 2 tsp Worcestershire sauce
  • 2 tbsp mustard

Instructions:

  • Preheat your oven to 375°F.
  • In a large bowl, combine the ground beef, egg, onion, dry onion mix, milk, bread crumbs, ginger, salt, and pepper. (I wear disposable gloves so my hands aren’t gross)
  • Once the mixture is well blended, divide it into twelve sections.
  • In a lightly greased mini loaf pan, form the mixture into mini loaves.
  • Next, combine the ketchup, Worcestershire sauce, brown sugar, and mustard. Once it is mixed, separate it into two equal sections.
  • Take one of the sections of the ketchup mixture, and using a silicone basting brush, baste the tops of the meatloaf.
  • Bake in the preheated oven for about 30 minutes, or until the meatloaves are cooked through and have an internal temperature of 160°F (70°C).
  • With about 10 minutes left, brush the tops of the mini meatloaves with the rest of the brown sugar mixture.
  • Once cooked, remove from the oven and let the mini meatloaves rest for a few minutes before serving.

Overall this recipe was a hit! Everyone loved the savory and juicy flavors of the meatloaf and the veggies were cooked perfectly with great seasoning. From start to finish, you will need about an hour to make and eat this meal. It took about 20 minutes to prep and get in the oven and 30 minutes to cook.

    I love meatloaf but don’t make it a lot because it is just me. Never though of using the mini loaf pans to make it. This would be great to make and freeze. Using the onion soup mix would be so easy to get all the spieces needed in it.
