I love easy delicious meals for my family. Our schedule is packed almost every day and so having a meal plan to follow and quick, easy meals to prepare makes my life so much easier. One of our family’s favorite casseroles is the tater tot casserole. As I was doing our weekly grocery shopping, I found new flavors of Green Giant® Veggie Tots in Corn and Sweet Potato & Cauliflower Veggie Tots flavors. I had to get them to try them! Since tater tot casserole was on the menu for the week, I decided to use the Veggie Tots for my recipe. I am so glad that I did! It turned out so good and gave the casserole a whole new level of flavors.

Before I share the recipe with you, I just want to tell you a little about Green Giant Veggie Tots. They are a family-friendly alternative to potato tots and French fries. Filled with broccoli or cauliflower, they’re an easy and fun way to get children to eat more veggies. Since getting these, we also tried the other varieties, and not only do my kids love them but so do my husband and I.
To make the Corn Veggie Tots Casserole, you will need the following:
- 2 bags of Green Giant Corn Veggie Tots
- 1 can of condensed cream of chicken or mushroom soup
- 1 cup of whole milk or evaporated milk
- 1 lb of hamburger
- 1 small onion, diced
- 2 cups of grated cheese

The first thing you will do is cook your hamburger and the onion in a pan and drain the grease. While the hamburger is cooking, you are going to take the cans of condensed soup and milk and mix them together in a bowl. Once the meat is done, you are going to take it and spread it evenly in the bottom of an 8×11 glass baking dish. Next, you will layer the Veggie Tots in the pan, over the cooked hamburger/onion. Next, pour the milk/soup mixture over the tots, coating them as evenly as possible. The last step is to sprinkle the grated cheese evenly over the top of the casserole.
Put it into the oven for 45 minutes at 350 degrees. After you pull it out of the oven let it sit for about 5 minutes before serving. My family loves to put ketchup over the top, but it is great plain as well. Be sure to add salt and pepper to taste. It takes about 15 minutes to prep and 45 minutes to make and you have a delicious dinner that everyone loves!

My family loves this recipe and with the addition of the Corn Veggie Tots, they will never want to eat it another way. It is absolutely delicious! And we also love that the bags have Box Tops on them. My kids got even more excited when they saw those. Here is the printable recipe:
