One of our favorite meats is tuna. I use it for all different kinds of meal ideas, but the latest recipe we tried was Stuffed Avocados with Tuna and Fresh Veggies, and they turned out amazing. We used the Bumble Bee® Solid White Albacore in Water and it made all the difference. You won’t believe the difference that you will see just opening the can and the taste is that much more amazing as well. With the avocado, fresh mini sweet peppers, lime, pickles, cilantro, and seasoning, you have a delicious meal in just minutes.

I love having fresh quality ingredients on hand to cook and create with. Because I want to make sure my family has the best, I like to get Bumble Bee® Solid White Albacore with it’s firm texture and fresh taste. Not only does it taste good, but it is also packed with a variety of nutrients including lean protein, healthy fat and important vitamins and minerals. It is a great main ingredient in any meal. We loved using it to make these stuffed avocados. I want to make sure my family is getting food that are good for them and fresh veggies and quality meats are at the top of my list.

The recipe for the stuffed avocados is very simple and only takes a few minutes to put together. You will need: a 5 oz can of Bumble Bee® Solid White Albacore in Water, two avocados, 3 mini sweet peppers, one lime cut in half, a small pickle-diced, seasoning and some cilantro. To put the recipe together, you will take the avocado and cut them in half length wise. Remove the pit and hollow out about a scoop of the avocado and put it into a bowl (repeat with each half). Next, you will take the Tuna (drained) and add it to the avocado. Mix these together. Now you will remove the seeds of and dice the mini sweet peppers and add them to the mixture. You will add the diced pickle next. Stir this together again then you will squeeze the juice from the line into the mixture you also season to taste. Mix it one last time, and then using a spoon, scoop the mixture into the halves of the avocados. Squeeze a little bit of lime juice on top and then garnish with the cilantro. The stuffed avocados taste great fresh, or kept in a sealed container for about a day.
