I love meals that are easy for me to make for my family, like this pressure cooker crack chicken. My electric pressure cooker makes them even easier, because I put everything in, set the timer and then it is ready to go. It is just like a slow cooker, only faster.

This pressure cooker crack chicken is delicious and makes a lot, so it is perfect for family gatherings, parties, or if you want to take dinner to a friend 😉

To make pressure cooker crack chicken, you will need frozen chicken breast, cream cheese, a ranch seasoning mix, crumbled bacon and milk. First, put the frozen chicken (I used about 2 lbs) in the pressure cooker, set it to poultry and cook it for about 25-30 minutes. (I did 30).

When your chicken is done cooking, turn off the pressure cooker, do a quick release.  When the pressure is released, take it out of the pressure cooker. You will want to drain the water and put the chicken into a bowl so you can shred it. I used a hand mixer and the dough hooks to shred the chicken. Just use the low setting and move it around slowly.

After you shred the chicken, add the cream cheese and ranch seasoning and set the pressure cooker to brown/saute so it all blends together nicely.

Once the cheese melts, stir everything together. Next, you will add the crumbled bacon and mix it in. This gives such a great flavor and tastes even better when it’s crispy.

You can add milk, a little at a time to get a thinner consistency. It should be similar to a chicken salad (not runny, but not thick).

Sprinkle some cheese on top before serving. You will have an amazing dinner ready in under an hour from start to finish. This recipe makes a lot – we were able to share it with two other families for dinner. You may want to keep it and have leftovers (good for a couple of days in the fridge) or you can cut the recipe in half.

Pressure Cooker Crack Chicken

Serve warm on a big hamburger bun with a delicious salad, chips and salsa, fruit, olives, and your favorite drink. This meal is great in the summer or winter. Add it to your menu for the week and try it! I know you will fall in love as we did!
