Being a mom is a lot of work. Times that by four – and well – most of my day goes to cleaning, cooking, running my kids around, school work, cooking, errands, cleaning and did I say cooking? I spend a better part of the day just cleaning and cooking and sometimes I get tried of it and just stop for a day. That is when my husband comes home from work and looks around and asks “What happened?” lol. I love being a mom – but sometimes we need a break. I don’t always get one – so one of my goals this year is to find a balance. I need to get back to balance so that I have me time, family time, “maid” time, and work time. Since I want to do more and be more efficient I like to eat LEAN CUISINE® because they are the perfect fit for my busy schedule.
I have a shopping list full of yummy foods for the next week so I head out to Walmart to pick them up. Among the fruits,veggies and other things, are LEAN CUISINE®. They have so many varieties that I don’t feel like I am eating the same thing every time, and it makes it so I can actually eat without spending 20 minutes in the kitchen cooking and cleaning (again). This frees up time – leaving me with some “me” time.
I love the new breakfast varieties that allow me to eat good in the mornings and the Culinary Collection with all of the exotic and yummy varieties of food. I was able to have this LEAN CUISINE® Turkey Sausage English Muffin (with egg and cheese) ready to eat with fresh fruit in about 5 minutes.
Another great breakfast variety they have is the LEAN CUISINE® Morning Collection™ Turkey Sausage Scramble with egg whites, roasted red potatoes, reduced-fat cheddar cheese, red peppers and onion. It tastes delicious and is a great way to start out the morning and give me energy.
The LEAN CUISINE® Sesame Chicken is amazing. I am so glad that it came in a portion controlled container because if it was at an all you can eat buffet I would have problems, lol. The sauce and the veggies with the pasta and chicken make a perfect combo.
To go along with the LEAN CUISINE® Sesame Chicken I made Parmesan Stuffed Sweet Peppers. They are a great side or even snack (watch out – they go fast). We love to have them for parties (think football) and get together’s with friends and family. They are really easy to make and taste so good. Just take mini sweet peppers and cut the tops off, cut them in half, remove the seeds and lay them out on a cookie sheet. Then you will take fresh grated Parmesan cheese and stuff each one. Bake in the oven for about 8 minutes at 350 degrees and you have a great side dish.
Ingredients
- 1 bag of mini sweet bell peppers
- 1 bag of fresh Parmesan cheese
Instructions
- Take the mini sweet peppers (as many as you want to make) and wash them.
- Then cut the tops off, cut them in half, remove the seeds and lay them out on a cookie sheet.
- Take the fresh grated Parmesan cheese and stuff each one by filling it with cheese (adding bacon, sausage, or other kind of meat in the pepper would also be divine).
- Bake in the oven for about 8 minutes at 350 degrees

I am finding a balance by organizing my time and getting back on track with LEAN CUISINE®. It is the easiest way (and tasty too) to eat with my busy schedule. I love that they are packed with protein and that LEAN CUISINE® offers over 50 varieties! I can always find something to curb what I am craving.

Stuffed peppers would be a great idea to pair with sesame noodles. I bet that’s yummy!

Wow, Lean Cuisine has it all! Breakfast to dinner in a snap, which is a lifesaver when you need a cooking break or you don’t care to have the mac ‘n cheese that the kids love!
I totally agree–Lean Cuisine has a whole lot of different meals to choose from. They are perfect for a quick lunch or even a dinner (I am single!). I may try those stuffed sweet red peppers-they sound good.
