Teriyaki Chicken and Cauliflower Rice Recipe

With the new year just around the corner, I am already starting to make small changes to help me get back on track with my health and weight loss goals. Part of that is because I want to be healthier and the other part is because my husband and I have been trying to conceive and I know that eating better and having healthy habits will help with that. Diet and Exercise are important when TTC or when you are pregnant, and so is taking a good multi-vitamin with DHA. My favorite is Nature Made® Prenatal Multi + DHA that we get at Sam’s Club or on samsclub.com.

There is enough in these bulk bags to make this meal a few times (or more than a few, depending on how many people you are feeding). It is simple to put together for a quick weeknight meal, or you can make it more elaborate depending on what you want to add. We just made a simple Teriyaki Chicken and Cauliflower Rice and added broccoli.

First, you are going to get the cauliflower rice cooking, so put that in a pan and cook according to package directions. If you have fresh cauliflower on hand, you can grate it into a pan and cook it over medium heat with light oil until browned. Heat the cauliflower rice for about 5 mins and then add the frozen pre-cooked chicken and broccoli. Heat over med-hi heat stirring occasionally until heated through. We added a no-salt seasoning blend and then poured a honey teriyaki glaze over the top when it was almost done cooking.

This is a great meal to make ahead of time that you can take with you and reheat for a quick healthy lunch. Cauliflower rice is one of my favorite things to cook with and I love all of the health benefits. Having a healthier diet, combined with taking a Nature Made Prenatal Multi + DHA vitamins, I know that I am on the right track. Trying to get pregnant can be a long road, but I am working hard be to be ready when it does!     I love cauliflower! I bet that rice cauliflower was so good! I recently made cauliflower soup. That was a first for me because my husband doesn’t really like cauliflower, but I made a personal batch for myself that I just love. Now I should make it with rice! Thanks for the idea!

    I guess I can consider myself lucky because none of my children and grandchildren are picky eaters. I know they will love this chicken and cauliflower rice. Looks so good from your photos, and I am pretty sure it tastes delicious!

    That sounds like the kind of recipe that I’ll enjoy! I definitely would love to make it! I like that it doesn’t take much of time and that it’s easy to prepare!

    All four of my adult children are fine with the children they have, although, with that price I will be passing on the vitamin info to anyone that needs it. We love Sams in fact just bought Christmas Eve stuff there. Your dinner looks delicious, I’d add twice the broccoli. Yum!

    This meal would work well for Weight Watchers. The broccoli and chicken are “free points” and the sauce wouldn’t be that high in points. Only the rice would have to be counted so it would be best to eat more chicken and less of the rice. Thanks for the idea.
