Football Rainbow cake made with Skittles for Super Bowl

In less than a month we will be watching the Super Bowl. I am so excited! We are already planning ahead with treat and snack ideas as well as fun games and decor. Today we made a really cool Football Rainbow cake inspired by Skittles to Make Super Bowl 50 Even Sweeter. I love how it turned out (and judging by how much my family ate – they loved it too). The cake is really easy to make and the 5 different colors really add a lot of fun to the party. Since we wanted to make it a Skittles cake, we used to the 5 colors from Skittles Original. We found Purple, Orange, Red, Yellow and Green food coloring and got a couple of white cake mixes. You will also want to grab some brown frosting. We picked up some cool football plates, a tablecloth and a few other things as well. While shopping on Amazon (which I do daily) I came across a great deal on their candy so I picked up the Skittles Original Candy, Twix Caramel Minis Chocolate Candy and Starburst Original Fruit Chews Candy. They are three of our families favorites and so I couldn’t pass them up. It is so nice to buy them online – it saves me so much time because I don’t have to make a trip to the store and Amazon has great prices and quick shipping.

To make the colored batters for your rainbow cake, you will want to take a large bowl and mix both cake mixes together. Because we are coloring them, you don’t need to worry about separating the egg yolk from the whites. Just use the whole egg. Once the batter is mixed according to the boxes directions, you will want to grab other bowls and separate them into five equal parts. I think about  1 1/2 cups in each bowl, but that is an estimate. Now you will take the five different colors and mix one color in each bowl. I love how well the colors turned out!

Now you have the batters mixed, you will want to put the cake together. I used a springform pan because it is easier (knowing I wanted to take it out and put it on a plate to decorate it. You will take about 1/2 of the batter from each bowl and pour it into the pan (in a different section) making sure all of the edges touch. I love how the batter looks all together. My kids told me it looked like playdough. lol. We baked the rainbow cake for about 25 minutes at 350 degrees (but you will want to check it to make sure it is not over cooking). Pull it out when it is done and let it cool for a bit. When it was ready, I put mine face down on a cool football plate we found.  This made it easier to decorate the rainbow cake with the Skittles on top since it was flat.

After you have the rainbow cake plated and ready to frost, grab some chocolate frosting and cover the whole cake. When that is done you will want to pull out one of those big bags of Skittles and get to work decorating it to look like a football. This was a lot of fun. I am glad that it was a big bag, because my kids kept sneaking and to “look” and would grab a handful of Skittles and run off. They thought they were pretty tricky. The Starbursts and Twix were not exempt from their “look and run” scheme. They are too cute!

To make the Football I just used different colors to make the lines. I really loved how it turned out. After it was ready I wanted to make some kabobs with the remaining candy. I took a metal skewer and poked holes in the tops off all the Twix bars, and in the middles of the Skittles. Then I grabbed a handful of toothpicks and built them. I started with a Skittle, then a Starburst and ended with a Twix on the bottom. The kids loved these as well. The whole thing turned out so good. I took large glass bowls and filled them up with the candy as well so that there was enough for everyone to have what they wanted.     I wonder if you could make these as cupcakes if you decorate them the same way and use the same cake mix. I think the kids would love it. I signed up to bring cupcakes to our Superbowl party but I may have to change my dessert! Thanks for sharing!
