I love cooking and baking but speaking honestly, there are some days where I just don’t have the time or energy. With four kids, sports, meetings, orchestra, a home business and still fitting in being a mom, cooking, cleaning, and everything that comes along with my church calling I am busy. Organizing my time helps but having good, healthy meals on hand like Marie Callender’s Pot Pies are life savers. My kids love them, and my husband and I love them because they not only taste delicious but also because they taste like a fresh cooked meal that our family can sit down and enjoy together even when we are short on time. Meal time is important to us, and gives us a chance to reconnect and visit.

I like to keep things on hand that we can make when we run home between basketball games, between orchestra practice and activity night at our church, or even when I just want a break from “cooking and cleaning”. I like to go to Walmart because they have a great selection of Marie Callender’s Pot Pies for a great price.

Marie Callender’s has so many varieties of Pot Pies and they are yummy. We keep a couple of each kind on hand. They microwave in about 8 minutes (for the large ones) and so we have a healthy dinner on the table in no time. They cook right in the box you bought them in and you can eat them right out of the mini pie pan they come in – so no mess with dishes either.

I carve the initials of the flavor of pie on the top (you can also do the initials of the person eating it) so that you know who’s is who’s just in case they get taken out of the box. These pies are very filling and are full of everything I love about pot pie.

One of my kids’ favorite things to eat with their pot pie is our yummy Apple Pie Tarts. They are so easy to make with a can of refrigerated biscuits, a couple of apples, some cinnamon and sugar and flavored cream cheese. Here is the recipe.

Apple Pie Tarts
First you are going to take two apples and cut them into pieces. I used a apple corer first and then diced the slices. Put all of the apple pieces into a bowl and sprinkle with cinnamon and sugar.

Next take on of the biscuits and roll it out flat (about 6″ circle). Spread a spoonful of the flavored cheese (I used Alouette Berries and Spice). Then add a couple spoonfuls of the apple mixture.

Take the edges and bring them up in a circle – not completely covering the apples in the center. Do this with all remaining biscuits. After you have them done you will take some melted butter and spread over the top of the apples and the dough. Put into preheated oven at 350 degrees and bake for about 16-18 minutes. Let cool or serve hot with ice cream. These are the perfect dessert because they are quick and easy to make and taste delicious.
