Cheesecake has always been a favorite of mine. I wanted to make a good no-bake recipe with all of the yummy strawberries we have been getting and the new Berry Oreos we found. Of course, we use the Mint Oreos too because, let’s face it, they are just too good not to. I hope you enjoy our No Bake Berry Oreo Strawberry Cheesecake Recipe.

Berry Oreo Strawberry {No Bake} Cheesecake Recipe

This Berry Oreo Strawberry Cheesecake recipe is pretty easy to make and much cheaper than buying one. The ingredients are simple:

  • 2 boxes of cream cheese
  • 1 lb package of strawberries
  • 1 pkg of cool whip topping
  • 1 pkg of Berry Oreo’s
  • 1 pkg of Mint Oreo’s
  • Sugar
  • Vanilla
  • 1/2 stick of butter

First you are going to take both bars of cream cheese, unwrap them and put them in a microwave-safe dish and heat for about 15 secs at a time, stirring after each round – to soften the cream cheese. After that you are going to take about 3 Berry Oreos and 2 Mint Oreos and crush them into crumbs using a Food Processor. Add them to the softened cream cheese. Take about 6-8 large strawberries and blend them in the Food Processor next and add that to the mixture. You will also add about 1/4 cup of white sugar and 1 tsp of Vanilla. Using a hand mixer  – blend for about 3-5 minutes or until all of the cream cheese is blended.

Once you have your mixture (be sure to leave enough in the bowl to make your cheesecake with) you will want to prepare your crust. Take about 1 pkg of graham crackers and 2 mint Oreos and 2 Berry Oreos and blend them in a Food Processor until it is a fine crumb blend. This will be part of the crust.

Once you have your crumb mixture – melt the 1/2 stick of butter and pour over the crumbs. I also add about a tbsp of sugar here as well.  Use the spoon to mix it around and then you will want to take your hands and mix it all together well making sure everything gets some melted butter on it. Once it is blended well you will take the mixture and put it into a Springform Pan {you can line the bottom with a piece of parchment paper first if desired to make it easier to remove off of the Springform Pan bottom} and press it to the bottom evenly all around and up the sides if desired.

I added a layer of the Extra Creamy Whip Cream topping on top of the crust bottom and then scooped about half of the strawberry cream cheese mixture on top of that. Spread the mixture evenly in the pan and then take a couple more Berry Oreos and blend them up to make a crumb topping for the Berry Oreo Strawberry Cheesecake. Since there are no eggs – you don’t have to bake it. I put a plate over my Springform Pan and put it in the fridge for about 5 hours to chill. You can add fresh strawberries to the top if desired.

This recipe sounds very tasty and I love that there’s no baking involved. We grow strawberries every year, so there’s no cost for me there. I’m curious though where to find the flavored oreo’s. I’ve never seen them when I’ve been shopping.
