I recently shared 5 must-have staples for your weekly shopping list and one of them was baking mixes. Because I am a busy mom, I like having things on hand that simplify my life a little, and baking mixes are so nice to help me make delicious meals for my family quicker. I picked up the Martha White® Sweet Yellow Cornbread Mix and some cube steak (pork or beef) on my last shopping trip to Smtih’s. My family loves Chicken Fried Steak so I wanted to make it with a cornbread crust. I am really impressed with how it turned out. It was so easy to put together and made a perfect quick dinner for my family.
To make the Chicken Fried Steak with Cornbread Crust you will need:
- 1 bag of Martha White Cornbread Mix
- Cube Steak (recipe for 1.5 lbs – about 3 pieces of meat)
- 1 egg
- ¾ cup of milk
- Salt and Pepper
Pre-heat the oven to 425 degrees. Get a glass casserole dish out and spray it with cooking spray. Once you have all of your ingredients, you will want to put them into bowls. Mix the milk and the egg together in one bowl. In another bowl you will mix the cornbread mix and sprinkle the salt and pepper to taste. Prepare your meat by rinsing it with water. Then you will want to coat both sides with the cornbread mix, coat both sides with the egg mixture, then recoat both sides in the cornbread mix. Once you have it coated put it in the greased dish and do the next one. Once all the meat is coated, put the dish in the oven and cook it for about 30 minutes (or until cooked through).

Putting this together was very easy and my whole family loved it. I used a pre-made gravy (just add the water and mix) because we were short on time, but you can make a really great gravy with flour, milk, salt, pepper and a little bit of butter. Chicken Fried Steak goes really well with mashed potatoes, but we opted for biscuits because my kids wanted biscuits and gravy as well.
