Pressure Cooker Beef Stew Recipe (Instant Pot)

Pressure Cooker Beef Stew Recipe

 2 lbs cubed beef
 8 medium potatoes
 1 lb baby carrots
 1 small sweet onion
 3 stocks of celery
 1 beef stew seasoning packet
 4 cups vegetable broth

First, you will want to put the cubed beef into the pressure cooker and have it set to brown/sautee (push the brown/sautee button and then start/stop to turn it on). Add some seasoning (I love using Mrs. Dash) and a little bit of oil and mix until the meat is browned on all sides. This usually takes about 5-7 minutes once the pot is heated.


While the meat is browning (or before you start putting it together) you will want to wash, peel and dice about 6-8 medium potatoes. Once the meat is browned, add the potatoes and then a 1 lb. bag of baby carrots. You can also add a small diced sweet onion and some chopped celery.


Next, you will add the seasoning (I used McCormick Slow Cookers Savory Pot Roast Mix but the Crock Pot one is great too). I used vegetable broth instead of water and I love the added flavor it gave and added 2-3 cups of it. 


Once you have everything in the pots, mix it around. You may want to add more or less liquid. Just remember that a lot of it will cook off and you don't want your beef stew to be dry and burned. It will have liquid in the pot still when it is done cooking. Once the stew is mixed, add the lid, lock it into place and set your timer to meet/stew and cook for 35 minutes. Make sure your pressure release valve is closed. 


Once it is done cooking you will want to let it set for a few minutes before opening the pressure release value. Once the pressure is gone, open the lid and serve warm with rolls and salad.
