I love my electric pressure cooker (or programmable pressure cooker). Many of you may have an Instapot or something similar. I have a Crock Pot pressure cooker, and I have been loving how easy it is to make delicious hearty meals with little prep and in a fraction of the time as before. One of my families favorite meals is beef stew, so I made a pressure cooker beef stew for dinner. It was simple to put together and tasted amazing! This one is definitely going to be a regular on our table.
You will want to use cubed beef (or buy a thick steak or roast and cube it yourself), peeled diced potatoes and baby carrots. You can also add diced onion and chopped celery.
First, you will want to put the cubed beef into the pressure cooker and have it set to brown/sautee (push the brown/sautee button and then start/stop to turn it on). Add some seasoning (I love using Mrs. Dash) and a little bit of oil and mix until the meat is browned on all sides. This usually takes about 5-7 minutes once the pot is heated.
While the meat is browning (or before you start putting it together) you will want to wash, peel and dice about 6-8 medium potatoes. Once the meat is browned, add the potatoes and then a 1 lb. bag of baby carrots. You can also add a small diced sweet onion and some chopped celery.
Next, you will add the seasoning (I used McCormick Slow Cookers Savory Pot Roast Mix but the Crock Pot one is great too). I used vegetable broth instead of water and I love the added flavor it gave and added 2-3 cups of it.
Once you have everything in the pots, mix it around. You may want to add more or less liquid. Just remember that a lot of it will cook off and you don’t want your beef stew to be dry and burned. It will have liquid in the pot still when it is done cooking. Once the stew is mixed, add the lid, lock it into place and set your timer to meet/stew and cook for 35 minutes. Make sure your pressure release valve is closed.
When the stew is done cooking, turn the cooker off and wait for a few minutes before starting the quick pressure release (which you do by just turning the valve to open). Serve hot with warm buttered rolls and green dinner salad. This really is a delicious meal!
